Nestled in the highland cloud forests of Yajalón, Chiapas, this coffee is grown at 900–1,000 meters above sea level — where cool subtropical air and mountain altitude combine to slow ripening and deepen flavour. The farms here are small by design, many tended by Indigenous families whose connection to the land spans generations. That history shapes everything: plots were cultivated through community-driven, small-scale farming rather than industrial estates, and the values behind that choice are still reflected in how the coffee is grown today.

Every step of production is done by hand, guided by traditional methods refined over decades of family knowledge and daily field work. At harvest — running from December through March — only the ripest cherries are selectively picked, ensuring quality starts at the source. The coffee is then delivered in parchment, carefully quality-controlled, and transported to a modern dry mill in Veracruz. There it's cleaned, milled, and sorted for export with the precision required for international markets — while staying true to the character of its origin.

The result is a coffee that carries its place with it: the terroir of Chiapas, the care of its growers, and a story rooted in culture, community, and craft.

With a medium-light roast level of 74 on the Agtron scale, our single origin Mexican coffee is ideal for pour over brewing or paper filter. A unique espresso experience.
