You asked us a lot of questions about decaf coffee, so we'll try to answer them in this description.
Any coffee can be decaffeinated and there are two main decaffeination processes: natural and chemical. At BBCR we chose a natural decaffeinated Colombian coffee (Swiss Water Processed). We found that Colombian coffee had the amazing body and aromatic notes that people were looking for and we chose Swiss Water for the obvious reason. ;)
The “Swiss Water Process” involves soaking the green beans in temperature-controlled water for a period of time, then exposing them to carbon filters that draw the caffeine molecules out of the body of the green bean, leaving the water and filters full of pure caffeine and the beans 99.9% caffeine-free. This allows for much more flavor to be retained in the bean during roasting and brewing, making it the obvious choice for those who want coffee without the side effects. This decaf can be consumed using all brewing methods and with all kinds of beverages.
Our decaffeinated Colombian coffee is a medium dark roast of 14 on the Roasting Scale and 61 on the Agtron Gourmet Scale established by the Specialty Coffee Association (SCA).
